Part of the fun of the Worldwide Vegan Bake Sale, coming up on Saturday, April 28th, is seeing all of the creative (and creatively presented) dishes that the vegan community dreams up. From “Bac-un” chocolate chip cookies to beautifully wrapped treats, there’s always something to catch your eye (and taste buds).
With that in mind, I decided to further explore the Daiya Cheese Wedges kick and try out something I haven’t had in a long time – Jalapeño Cheddar Cornbread Muffins! Simple really, I took this recipe from VegWeb.com, added some cubed Daiya cheddar wedges and diced jalapeño slices and voilà!
The wedges held up well to the baking and ended up being a deliciously gooey addition to the muffins. I used a little over half of the package, though I think next time I’d use half or less (some muffins were so cheesy they fell apart quite easily). But overall, it was a definite win!
